Eating vegetables is an easy and healthy way to get all the nutrition a body needs. That being said, not everyone likes vegetables. With that in mind, here are some ways to make vegetables better and more enjoyable for everyone.

Garlic Roasted Cherry Tomatoes

A perfect addition to almost any dish. All that is needed is some oil, cherry tomatoes and garlic, minced and tossed in the oven for roasting. Add on pizza, to pasta dishes, or even a salad. Either way, these taste great.

Baked Zucchini Fries With Parmesan

Easy and fun, and tastes awesome with ketchup or whatever sauce you love. Slice up a zucchini, coat in oil and sesame and add a dose of parmesan and bake in the oven. Makes a perfect snack or an excellent side dish. Perfect for French fry lovers who don’t get excited about their veggies.

Deep Fried Artichoke Hearts And Tartar Sauce

Deep fry the artichoke hearts and make a crunchy snack or appetizer. Use tartar sauce as a dip and it will have people asking for more.

Cheesy Brussel Sprouts With Bacon

There is an old belief that covering even the worst vegetable with cheese and adding bacon will get folks to eat it right up. Well, it’s true. Adding cheese and bacon, with a touch of heavy cream will get even the pickiest eater to try brussel sprouts.

Creamed Peas And Onions

This may not be the best looking meal, but the taste is out of this world. A bit of sugar, greek yogurt plain and some pearl onions combine to make sweet peas even better. A great side dish that takes little effort and tastes awesome.

Roasted Red Pepper Pasta

Just when you thought pasta couldn’t get any better, the addition of garlic and roasted red bell peppers make this pasta a dish to love. Taking shallots and some almond milk and some tomato sauce will tantalize the taste buds of even the most discriminating.

Asian Style Sesame Garlic Green Beans

Many people like green beans but there are a few hold outs. To make this occasionally boring side dish even better and perhaps turn a few opinions, add an Asian flair. To make, add a garlic clove, some toasted sesame seeds and soy sauce with a little bit of butter and toss it all in a wok and stir fry. In short order, green beans go from boring to WOW!

Maple Glazed Carrots

Another dish that can be had on the side or as a snack. This one is very easy, just add some quality maple syrup and bake gently for a few minutes to allow the flavors to meld.

Grilled Cabbage Wedges With A Spicy Lime Dressing Sauce

Garlic, fish sauce, olive oil and pepper seasonings in a lime juice base combine to create a perfect sauce for grilled cabbage wedges. Great for serving with grilled fish or steak.

Macaroni and Cheese Stuffed Chili Peppers

Finally a dish that everyone can enjoy and still be healthy. Make a batch of mac and cheese with healthy ingredients and stuff into a large chilipepper and roast in the oven. Either as a side or snack, these will be the rave of the party.

Roasted Broccoli With Parmesan Cheese

Broccoli gets a bad rap, but you can easily make it delicious with just a few steps. Drizzle florets with olive oil and kosher salt, and then roast them for 12-15 minutes at 500 degrees. Once they come out, season them with black pepper and parmesan cheese, then enjoy!

Buffalo Cauliflower

This is the perfect dish to get that wing-lover in your life to eat veggies. Toss cauliflower into a bowl filled with 1/2 cup of water, 2 tablespoons olive oil, and 1/4 teaspoon kosher salt. Then roast the cauliflower for 20-25 minutes at 400 degrees. Take the cauliflower out and drizzle and toss it in a mixture of 2 tablespoons melted butter, 1/4 cup hot sauce, and 1 tablespoon lemon juice, then put it back in the oven for another 5-7 minutes. Serve with blue cheese.

Eggplant Pizzas

Turning your veggies into a tasty pizza is a great way to entice anyone. Use thick sliced of eggplant as the crust, and pile on basil, tomatoes, cheese, and other ingredients that you’re drawn to. After cooking, these treats will be perfect as party snacks or family dinners!

Asparagus Gruyere Tart

Having trouble finding a way to make asparagus tasty? Look no further! With just a sheet of puff pastry, 2 cups of gruyere cheese, and a tablespoon of olive oil you can turn bland asparagus into a delicious, cheesy pastry.

Spinach Feta Potato Gratin

It’s no secret that spinach and cheese are a match made in heaven, and this recipe adds another crowd pleaser to the mix: potatoes! Cover a buttered dish with potato slices, and top that with 3 cans of spinach that’s been dried and 1/2 cup of crumbled feta cheese. Cover the spinach and cheese with another layer of potato slices, and then top the potato layer with a mixture of 2 1/2 cups of heavy cream, 3 eggs, and salt and pepper. Bake for 40 minutes at 375 degrees covered in foil, and then another 35-40 minutes without foil.
